So I’ve been watching what’s going on in the food business lately and it’s pretty wild. The places that are doing well aren’t doing anything crazy. They’re just paying attention to stuff that’s actually changing. And the ones that are struggling? They’re basically ignoring it.
I wanted to write this down because I keep talking to restaurant owners who have no idea why their business is slowing down. They think their food is good so people should come. But that’s not really how it works anymore.
Let me just tell you what I’m seeing.
Okay so this is real. Your customers are thinking about food differently than they were a few years ago. They want less sugar. They want more protein. They want to know what’s in it.
But here’s the thing that matters. They still want it to taste good. Nobody’s going to eat something that tastes like cardboard just because it’s healthy. So you need options that are actually good.
I saw this shawarma place that added a low carb wrap. Not some weird diet thing. Just a good wrap that happens to have less carbs. People order it. It’s not replacing their regular menu. It’s just there as an option. That works.
Same with desserts. There’s places doing vegan stuff now but most of it is terrible. There’s one spot though that makes vegan brownies that are actually better than the regular brownies. That’s the move. Make something good. Don’t make it about the diet thing.
People aren’t just grabbing coffee and leaving anymore. They’re sitting there for hours. Working. Meeting people. Just hanging out.
So your cafe isn’t just competing on coffee quality anymore. It’s competing on whether someone actually wants to sit in your space.
Is the chair comfortable? Can you actually work at the table? Is the wifi decent? Is it too loud? These things matter now. They matter a lot.
There’s this cafe I go to sometimes and it’s always packed. The coffee is fine. It’s not the best coffee ever but it’s good. But the space is nice. You can actually sit there comfortably. The chairs don’t hurt your back. The lighting is good. The music isn’t annoying. It’s the same reason some of the best breakfast places in Dubai stay busy from morning until lunch. People aren’t just buying food anymore. They’re paying for an experience they actually want to spend time in.
People care about specialty coffee too. Where do the beans come from? How is it made? They want to see someone actually making their coffee. Not just pushing a button. Actually making it. It doesn’t have to be complicated but people notice.
This is interesting because people are getting bored with the same menu everywhere. They want something that feels like it belongs where they are.
Dates. Cardamom. Saffron. Rose. Tahini. These things are showing up in random places now. Not in a gimmicky way. Actually good. I had this date croissant and it was really good. I went back for it. Other people were ordering it too.
Limited edition stuff works. People get excited. They tell their friends. They post it on Instagram. A seasonal menu item that’s only around for a month? People come back specifically for that. It’s the same mindset behind many popular weekend activities in the UAE, where people are always looking for something new instead of repeating the same routine every week.
You don’t throw out everything international. You just mix it. Take something people know and add something local to it. That’s it.
This is just how people order now. They don’t call. They pull out their phone and order. If you don’t have that, they go somewhere else.
Even ice cream is getting delivered now. Ice cream! That would have been crazy a few years ago. Now it’s normal.
If you’re not on the delivery apps, you’re losing money. I don’t care how good your food is. If I can’t order it on my phone, I’m ordering from someone else. That’s just reality.
Drive throughs. Delivery. Contactless payment. All of it. It’s not fancy. It’s just what people expect.
This is something that really bothers me. So many restaurant owners have no idea what’s actually working and what isn’t. They’re just guessing.
You can use software to see what people are actually ordering. What’s sitting in your inventory. What people in your neighborhood want. You can figure out how much you’re wasting. You can know your numbers instead of just hoping things are okay.
It’s not complicated. There are tools that make it easy. You just have to use them.
People are watching their money. But they still want nice things. They just don’t want to spend a fortune on them.
So you can sell premium stuff at normal prices. A really good drink. A nice pastry. Something that feels special but doesn’t cost a ton. People will buy it because it makes them feel good without breaking the bank.
I didn’t think this mattered that much until I started paying attention. But people actually care. They notice if you’re using recyclable stuff. They notice if you’re wasting food. They notice if you’re working with local suppliers.
You don’t have to make a big announcement about it. Just do it. Use glass instead of plastic. Don’t throw away food. Buy from local people when you can. People will see it and they’ll respect it.
Don’t change everything tomorrow. That’s a disaster. Pick one or two things. Maybe add some healthier options. Maybe get on the delivery apps. Maybe just make your space more comfortable.
Try it. See what happens. Listen to what people actually tell you. Then do more of what works.
That’s really it.
What’s actually changing in restaurants?
People want food that’s good for them but still tastes good. They want to order on their phone. They want cafes to be nice places to sit. They want local stuff mixed in. They want things fast. They want businesses that aren’t destroying the planet.
How do I get younger people to come?
Make your place look nice. Make it easy to order. Have interesting menu items. Have good coffee. Be on the apps. Show up where they’re looking.
Do I really need all the tech stuff?
Yeah. You need people to be able to order without calling. You need to know what’s working. You don’t need to be a tech company. Just use technology like a normal business.
How do I add healthier food without losing my regular customers?
Add it. Don’t replace anything. Just give people options. They’ll pick what they want.
Does sustainability actually matter?
Yeah. People see it. It builds loyalty. Just do the right thing.
How do small places compete with big chains?
You’re faster. You know your neighborhood. You can change things quickly. Big chains move slow. You move fast. You’re real. Use that.
